Olive Oil Cake With Peaches
Pair With Our House-Made Citrus Marmalade
Ingredients:
- 3 Cups all-purpose flour
- 1 ½ Teaspoons kosher salt
- 1 Teaspoon baking powder
- ½ Teaspoon baking soda
- 3 Large eggs
- 1 ¾ Cups white sugar + 2 tablespoons for peach caramelizing
- 1 Cup extra-virgin olive oil, plus more for greasing
- 1 Cup whole milk
- 1 Tablespoon honey
- 1 Tablespoon powdered sugar for dusting (Optional)
- 4 Peaches
- 1 Tablespoon butter
Directions:
- Preheat the oven to 350 degrees fahrenheit.
- Line two – nine inch pans with parchment paper.
- Slice 3 peaches in thin half circles. Line the bottom of one of the pans with peach slices.
- Combine dry items in a bowl.
- Combine wet ingredients in a separate bowl.
- Slowly add dry items to wet items. Try not to over mix.
- Transfer mixture into two prepared round pans.
- Bake for approximately 40 minutes until baked.
- Heat on low in a pan the butter and 2 tablespoons sugar until combined. Slice one peach into thin half circles. Add peaches to the pan and cook on low for about 10 minutes.
- After cakes have cooled add the caramelized peaches as the middle layer of the two cakes with the peach lined pan as the top.
- Sift powdered sugar on top of the cake
