Olive Oil Cake With Peaches

Pair With Our House-Made Citrus Marmalade

Ingredients:

  • 3 Cups all-purpose flour
  • 1 ½ Teaspoons kosher salt
  • 1 Teaspoon baking powder
  • ½ Teaspoon baking soda
  • 3 Large eggs
  • 1 ¾ Cups white sugar + 2 tablespoons for peach caramelizing
  • 1 Cup extra-virgin olive oil, plus more for greasing
  • 1 Cup whole milk
  • 1 Tablespoon honey
  • 1 Tablespoon powdered sugar for dusting (Optional)
  • 4 Peaches
  • 1 Tablespoon butter

Directions:

  1. Preheat the oven to 350 degrees fahrenheit.
  2. Line two – nine inch pans with parchment paper.
  3. Slice 3 peaches in thin half circles. Line the bottom of one of the pans with peach slices.
  4. Combine dry items in a bowl.
  5. Combine wet ingredients in a separate bowl.
  6. Slowly add dry items to wet items. Try not to over mix.
  7. Transfer mixture into two prepared round pans.
  8. Bake for approximately 40 minutes until baked.
  9. Heat on low in a pan the butter and 2 tablespoons sugar until combined. Slice one peach into thin half circles. Add peaches to the pan and cook on low for about 10 minutes.
  10. After cakes have cooled add the caramelized peaches as the middle layer of the two cakes with the peach lined pan as the top.
  11. Sift powdered sugar on top of the cake
